When choosing wood for heating, or even just for a roast, we have to consider several factors: the heating value of the wood, the yield, humidity, the quality of smoke and the aromas produced by burning.
It is good to know, that to obtain a complete combustion with very high efficiency, the wood must be dry, with at least 2 years it dries and a moisture content between 15 and 20%.

- Oak wood is a type of fine wood, it has very good resistance and is difficult to deform, it burns very slowly and keeps the flame alive in the hearth. Its calorific value is about 4631 Kcal/kg.
- Beech wood is extremely compact, has a heating value of about 4617 Kcal/kg and is particularly suitable for all types of cooking thanks to its slow burning;
- The calorific value of the hornbeam is about 4640 kcal/kg, this wood keeps the flame glowing for a long time and does not produce sparks, which should not be underestimated if we aim for a good yield. As it is also a rather aromatic wood, it is also used for feeding wood-fired ovens in order to give the food a special and delicate flavouring or smoking.
